Grease Interceptor – Terms Decoded

Understanding your equipment and local FOG ordinance is often the last thing a restaurant owner wants to worry about. Lets face it, you didn’t get into this business to become an expert in grease! It is important that everyone is on the same page, understanding your responsibilities will lead to you get your restaurant doors open and the municipality protecting their plumbing infrastructure. Understand some of the common terms below:

Food Establishment (FSE) – This is the classification for restaurants, catering facilities, deli’s and anyone the city deems as a food generating business. These are businesses that would be required to install and maintain an onsite grease interceptor.

Plumbing Engineer or Kitchen Designer – Many FSE’s would work with an engineer or kitchen designer to help design their restaurant kitchen. Although you would work closely with these designers on an individual bases, in general, these designers would be responsible for putting together the design of your kitchen. These designs would include the equipment being used such as a grease interceptor. Note: Grease Guardian works closely with these design professionals to ensure proper sizing and location of your grease interceptor.

Grease Interceptor Maintenance – All grease interceptors require a level of maintenance. It is understanding the type and frequency of the maintenance that should shape your interceptor purchase. Manual or Passive interceptors are required to be pumped out when they reach capacity. This could be frequent, as often as a week or two. This is a long-term expense that adds up over time. Installing an Automatic Grease Interceptors reduces this pump out frequency. With the skimming drum automatically removing grease from the interceptor every day, it takes longer for the interceptor to reach capacity. Saving you Money!
