What size grease interceptor do I need?

This is the most common question we get asked when someone is in the market for a grease interceptor. We always stress the importance of correctly sizing you interceptor. This will avoid any issues with the local municipal code and most importantly insure the equipment will work!

Using our Grease Guardian equipment as an example, we size the interceptor based on the maximum flow rate of the necessary kitchen fixtures connected to the equipment. Take a 3-compartment sink, using the PDI formula we take the length, width, and depth of a single compartment and calculate the equivalent gpm of the entire sink. We then match that with the properly sized and tested Grease Guardian machine.

For Example: A sink with the maximum flow of 23 gallons per minute will require a GGX25. This machine is tested and approved to handle 25gpm.

What is the required maintenance on a grease interceptor?

There is no such thing as a maintenance free grease interceptor. All models and styles require certain measures to be taken to ensure proper efficiency and long-term success.

Whether it be less than 5 minutes of time on your Grease Guardian or paying for a certified pumper to properly look after your large tank, you must consider the long-term costs of everything. No grease interceptor is designed to be completely hands off.
